I got the idea for this recipe form Kris Carr's book Crazy Sexy Diet. I was on a candida cleanse and wasn't allowed to have any sweet vegetables or fruit, and couldn't imagine making a juice without beets, carrots, apples, or pears. But low and behold, I discovered that with the right amount of green vegetables and a little ginger and lemon I could make a pretty sweet drink! I've been making this juice almost every morning since April, so it's hard to start my day without it!
I find that the following is a perfect balance of sweet and savory and yields a nice big glass of juice to tide me over until lunch time (or a snack). It is packed with nutrients, mainly vitamins A, C, K with some folate, magnesium, potassium, calcium, and iron.
Ingredients (all organic):
- celery - 2 stalks
- broccoli - 1 stalk (no head)
- kale - 2-3 leaves
- romaine lettuce - 3 leaves
- cucumber - 1/2 of one
- fennel (optional) - 1/5 of a bulb (and stalk if it has one)
- spinach - 1 handful
- parsley - few strands
- ginger - 1 inch
- lemon - 1 slice
Juice and enjoy!
