With all my dietary preferences, it can be challenging to find crunchy snacks that really satisfy. Potato chips are tasty yet have no nutritonal value and are full of oil. I'm sensitive to gluten and corn, so chips made from those ingredients are out of the question. Bean chips are a great alternative, but they often upset my stomach. Kale chips have been the answer for years, however I crave variety. Healthy Vegan Food in Las Vegas: Interactive Map


Las Vegas isn't usually the place to go when you're eating healthy. One would assume it's also not great for vegans either, but when you look closely and do your research both assumptions are quite false. You may have seen my reviews from my trips to Vegas in the past, but those were the old days - my diet has changed and the city is getting healthier and healthier, so I can't wait to go back and try it all out.

I found this recipe while searching for a pasta and butternut squash dish. With a few modifications I made it vegan, gluten-free, soy-free, sugar-free, low in oil, and no added salt. It's a very hardy dish with flavors reminiscent of a dish you'd have for Thanksgiving, due to the thyme and nutmeg. You can play around with the seasonings to give it a taste suitable to your palette, but I think it's fantastic the way it is.

These recipes were the result of not having a lot of food in the kitchen - I found some recipes on Food.com and Epicurious and adapted them a little. They each cost less than $1.50 per serving and took less than 10 minutes to prep. You can change up the ingredients a little based on what you have on hand in your own kitchen. Both recipes are gluten, soy, and sugar free, and low in salt and oil.
