Way Better SouthWest Salad (video)

The is the first of a series of recipes featuring Way Better Snacks' tortilla chips now that I'm part of their ambassador team (read more on that here). My goal is to find unique ways to use them and inspire you to get more creative - there's so many ways to enjoy chips other than in dips and nachos. This is a twist on the traditional SouthWest Salad - it is free of salt, oil, sugar, gluten, soy, and corn and is raw (however, the chips are made from organic, non-GMO corn and contain a bit of oil).

I served it to my family and they really enjoyed it. They're not used to salt and oil-free dressing so if I were to make it for them again I'd add in more garlic (2 cloves instead of 1) and perhaps use a bit more dressing. We all agreed that the crunch and flavor of the Way Better chips were the best part. It was more than enough salad for a filling lunch for each of us.

Serves 2-4

Ingredients

Dressing:
  • 1/2 cup raw, unsalted cashews
  • 1-2 cloves of garlic
  • 3 tbsp nutritional yeast
  • 1/2 tsp paprika
  • 1/2 tsp chipotle
  • dash of black pepper
  • juice from 1/2 lime
  • 1/4 - 1/2 cup water 
Salad:
  • 1 head of romaine lettuce
  • 1/2 red onion
  • 3-4 tomatoes
  • 1 small or medium size carrot
  • 1/2 cucumber
  • 1 small red or orange pepper
  • juice from 1/2 lime
  • 1 or 2 avocados
  • 3 tbsp cilantro
  • 1 bag salt-free tortilla chips (I used Way Better's Naked Blues)

Instructions

Make Dressing:

  1. Soak cashews for 6 hours
  2. Drain cashews and add to blender
  3. Add garlic, nutritional yeast, paprika, chipotle, black pepper, lime and water
Put together salad:
  1. Chop lettuce into bite size pieces & add to bowl
  2. Dice tomatoes and add in
  3. Chop onion and add in
  4. Slice avocado and add in
  5. Dice pepper and add in
  6. Dice cucumber and add in
  7. Shred carrot and add in
  8. Squeeze lime juice on top and add in
  9. Chop up cilantro and (you guessed it) add in
  10. Toss salad
  11. Pour dressing on top and toss again
  12. Break up chips on top
  13. Serve into plates or salad bowls
