Serves 2-4
Ingredients
- 1/2 cup raw, unsalted cashews
- 1-2 cloves of garlic
- 3 tbsp nutritional yeast
- 1/2 tsp paprika
- 1/2 tsp chipotle
- dash of black pepper
- juice from 1/2 lime
- 1/4 - 1/2 cup water
- 1 head of romaine lettuce
- 1/2 red onion
- 3-4 tomatoes
- 1 small or medium size carrot
- 1/2 cucumber
- 1 small red or orange pepper
- juice from 1/2 lime
- 1 or 2 avocados
- 3 tbsp cilantro
- 1 bag salt-free tortilla chips (I used Way Better's Naked Blues)
Instructions
Make Dressing:
- Soak cashews for 6 hours
- Drain cashews and add to blender
- Add garlic, nutritional yeast, paprika, chipotle, black pepper, lime and water
- Chop lettuce into bite size pieces & add to bowl
- Dice tomatoes and add in
- Chop onion and add in
- Slice avocado and add in
- Dice pepper and add in
- Dice cucumber and add in
- Shred carrot and add in
- Squeeze lime juice on top and add in
- Chop up cilantro and (you guessed it) add in
- Toss salad
- Pour dressing on top and toss again
- Break up chips on top
- Serve into plates or salad bowls
